Hand forged from two different metals, this san mai gyuto is a work horse for the kitchen. With an outer cladding of wrought iron (sourced from anchor chain made in the 1800s) and an edge steel of hitachi white ultra high carbon steel. This knife will have long edge life and combines toughness with taking a keen edge. This knife features a beautiful piece of egg fruit burl from southern China and a piece of 40,000 year old walrus tusk from the last ice age.
